Notes from the farm team:

‘In 2018, the island’s harvest started late. It began in April and Mount Gay’s harvest started at the end of July, almost Crop Over time. This is the latest we have ever harvested, and the team had just 1 week to harvest all the sugar cane, so they had to source an additional harvester to cut everything on time. With this time pressure, the team became very close, and a real community was built with everyone working together to get it done on time. We were lucky as the weather was very good throughout our harvest with very little rainfall meaning we were not held up by the rain and had efficient delivery.’

‘The 2018 harvest was a very special one for me. It was my first year as a Mount Gay employee, working at the Estate and supervising the sugarcane production. I remember being very excited and thankful for the opportunity to be a part of the Mount Gay Team. That year, we had 3 mechanical harvesters and we started the harvest in Bishops Field, just opposite the ageing bonds. One thing that stood out was that the weather cooperated! The sun was very hot and the harvest was smooth, allowing us to send the canes to the Mill quickly. It was a beautiful year for sugarcane and I am happy to see the end product of that work.

‘I was part of the 2018 harvest and was responsible for taking the fire cart to the field and working with harvester #44.  It was a great experience for me to see the harvesting of the cane in such a wonderful environment as the sun was out in all its glory. It was the first harvest for the new Estate management which took over in April 2018 and all went smoothly with very little issues.  I enjoyed working on the harvesting of the sugarcane especially and see today the end product, which is best rum in the world.’

FERMENTATION

Yeast
type

Proprietary yeast cultivated from the Mount Gay Estate.

Fermentation
length

9 days.

Fermentation
characteristics

Very long fermentation (9 days vs. our standard 4 days) which led to a secondary fermentation and provided a really disctinctive falvour giving specific Barbadian notes like pineapple and guava.

‘Due to long fermentation length we went into a secondary fermentation, which provided a really distinctive flavour, giving specific Barbadian notes that we don’t normally encounter in our rums, like pineapple or guava. You really get the fruitier side of the congeners appearing.’

‘Barbados, with its unique climate and terroir, plays a crucial role in shaping the character of our rums. The warm, tropical environment facilitates a faster and more interactive ageing process compared to cooler climates. This tropical aging results in rums with richer, more complex flavour profiles.’

“Single Estate is a sipping rum, and it is at level of alcohol that offers a beautiful balance between power and elegance, intensity and finesse of the aromas… it is an invitation to discover the many layers of flavours that come from our Estate canes. Personally, after a few sips, I recommend to add a drop of spring water and you will notice new hints coming up… it is a beautiful journey.”
