This rum is an incredibly complex blend, bringing to life the complexity of St Lucy, Barbados and the Mount Gay Estate terroir.

APPEARANCE:

Light golden hues.

AROMAS:

Pear, plum, fresh cut flowers, dried fruits, vanilla, nutmeg, oak and lemon.

PALATE:

Pineapple, sea salt, leather, ripe yellow banana, oak and star anise.

Life on the Estate

THE MOUNT GAY ESTATE – ST LUCY, BARBADOS

The Mount Gay Estate, located on the plateau of the Upper Coral Reef terrace, was lifted up from the ocean 400,000 years ago.
Its altitude range is 150m on the East and 105m on the West. Its soil texture is dominated by clay.

· Fast growing and a good option for forced back planting.
· Low incidence of flowering.
· Will lodge at heavy yield but generally erect.
· Resistant to leaf scale, rust and yellow spot.
· It should be planted in free draining fields for best results.
· It is not as amenable to mechanical harvesting as some of the other varieties.

Notes from the field: this year was marked by 30% farm utilisation strategy and historical yield.

“As a child, I was always fascinated by the use of local produce to make little treats like tamarind balls and Bajan cherry juice as it made them seem all the more special. So today, I consider it an absolute honour to be managing the Mount Gay Estate to produce our own sugarcane and molasses and of course, our very own rum from soil to sip. The pride is palpable and it is my hope that this will be felt in every bottle of our Single Estate Rum.”

FROM CANE TO FERMENTATION

JOURNEY INTO MOLASSES

Mount Gay Single Estate Series rum release_01 was created using 100% molasses created from sugar canes grown at the Mount Gay Estate in St Lucy, Barbados. The molasses have as characteristics a very high sugar content (72%).

Very long fermentation (9 days vs. our standard 4 days) which led to a secondary fermentation.

‘Due to long fermentation length we went into a secondary fermentation, which provided a really distinctive flavour, giving specific Barbadian notes that we don’t normally encounter in our rums, like pineapple or guava. You really get the fruitier side of the congeners appearing.’

We understand what maturation in Barbados does add to our rum and how else to honor this molasses, how else to honor this process, but to let that happen. When you look at this bottle, you see my signature though what you don’t see is the fingerprints of everybody that works at Mount Gay.’
