This rum is the fourth release in the Single Estate Series, coming from just one year of harvest.
APPEARANCE:
Light golden hues.
AROMAS:
Earthy, fresh cut grass, oaky, green apple, white roses, jasmine, toffee, slight vanilla notes, red fruits and gingerbread.
PALATE:
Cherry, sharp oak, salty smokiness, floral, slightly bitter, caramel, red fruits.

THE MOUNT GAY ESTATE – ST LUCY, BARBADOS
The Mount Gay Estate, located on the plateau of the Upper Coral Reef terrace, was lifted up from the ocean 400,000 years ago.
Its altitude range is 150m on the East and 105m on the West. Its soil texture is dominated by clay.

Notes from the field:
‘2019 is the year when Mount Gay started integrating regenerative agriculture. In 2019, the island’s harvest got off to a good start. It began in early March and Mount Gay’s harvest started in May. Mount Gay’s canes were the last to be harvested on the island. This is because we asked the sugar cane factory, Portvale, to completely clean its facilities before processing our cane to ensure we preserved our molasses’ quality and the terroir’s characteristics. The harvest was for a prolonged period of time given the high amount of acreage to be covered and it came to a close alongside the Crop Over season. The canes experienced a period of drought during the production cycle but weather conditions were a mixture of sunshine and rain during the harvest. There were also low yields in the ratoon crops. Despite these challenges, the team forged strong bonds, creating a true community spirit as they worked together to meet the deadline.‘
FROM CANE TO FERMENTATION
JOURNEY INTO MOLASSES
Mount Gay Single Estate Series 25_04 was created using 100% molasses created from sugar canes grown at the Mount Gay Estate in St Lucy, Barbados. The molasses have as characteristics a very high sugar content (72%).

Very long fermentation (9 days vs. our standard 4 days) which led to a secondary fermentation and provided a really distinctive flavour giving specific Barbadian notes like jasmine, oak and toffee.
